Can You Mix Protein Powder With Hot Coffee?
Yes. But there's a reason your first attempt looked like it had gone off.
Why it curdles
Two things are working against you at once, and coffee delivers both.
Heat denatures protein. Above roughly 70°C, whey proteins unfold from their neat folded structure. Unfolded proteins expose sticky hydrophobic regions that were previously tucked inside, and they start binding to each other — aggregating into visible clumps.
Coffee is acidic. Around pH 5, which sits uncomfortably close to whey protein's isoelectric point — the pH at which its net electrical charge is near zero. Proteins repel each other when they carry a charge; strip that away and there's nothing keeping them apart.
Heat unfolds them and acidity removes the force keeping them separated. That's curdling.
Fresh coffee off the boil is around 90–96°C, so pouring it directly onto powder is close to the worst case.
The method that works
1. Let the coffee cool. Two to three minutes off the boil takes you to around 70–80°C, which is a considerably safer zone. Hot enough to drink, cool enough not to wreck the protein.
2. Make a paste first. Powder plus a small splash of cold liquid, mixed smooth. This wets every particle while they're cool and unaggregated.
3. Add the hot coffee slowly, stirring. Slow addition keeps local temperature down and avoids shocking the protein. Pouring it all in at once creates a hot spot exactly where the protein is most concentrated.
4. Don't boil it afterwards. No microwaving to reheat.
What works better
Whey isolate over concentrate — fewer of the other milk components that contribute to aggregation.
Cold brew, heated gently — lower acidity than hot-brewed coffee, so you've removed one of the two problems.

Does heat destroy the protein?

Denaturation changes the protein's shape, not its amino acid content. The nutritional value is essentially intact. Cooking an egg denatures its protein and it's still protein.
