Why Protein Coffee Is Better Iced
Not a preference. There's a physical reason, and it comes down to removing one of the two forces that ruin a protein drink.
Hot coffee fights protein on two fronts
Whey aggregates — clumps — when two things happen together.
Heat. Above roughly 70°C whey proteins unfold, exposing sticky regions that were tucked inside, and they start binding to each other. Fresh coffee off the boil is 90–96°C.
Acidity. Coffee sits around pH 5, uncomfortably close to whey's isoelectric point — the pH where its net charge approaches zero. Charge is what keeps protein molecules repelling each other. Remove it and nothing keeps them apart.
Hot coffee delivers both at once. That's curdling, and it's why pouring espresso onto a scoop of whey produces something that looks broken.
Iced coffee removes the heat entirely. You're left with only the acidity, and acidity alone is much easier for a well-formulated protein to handle.
Cold brew makes it easier still
Cold brew is meaningfully less acidic than hot-brewed coffee — the extraction chemistry is different, and many of the acidic compounds that hot water pulls out simply don't extract at low temperature.
So cold brew reduces the second problem too. It's the easiest base for a protein coffee by a clear margin.
The texture difference
Cold drinks are thicker — liquid viscosity increases as temperature drops, and dissolved protein adds body. In a cold drink that reads as creamy. In a hot drink the same protein frequently reads as slimy or skin-forming.
It's the same reason a cold milkshake is pleasant and a warm one isn't.
The honest downside
Cold mutes aroma. Volatile aromatic compounds — which are most of what you perceive as coffee flavour — release more readily when warm.
So iced coffee is inherently less aromatic than hot. That's a real trade.
The reason it still wins for protein: protein already mutes aroma by binding volatiles. If you're going to lose aromatic intensity either way, you may as well keep the texture. A hot protein coffee loses aroma and has a compromised texture — worst of both.
There's a formulation answer to this too, which is to build the drink to be aromatic cold rather than hoping heat rescues it. That's why most protein coffee doesn't taste like coffee — brands formulate for hot, then people drink it cold.

It's doable — let the coffee cool a couple of minutes, paste first, add slowly. Full method here.
Your protein is fine either way; heat denatures it without destroying it. It's the drink that suffers, not the nutrition.
